Restaurants are commonly 4x more energy intensive than the rest of the hotel, making it one of the most energy intensive areas of any commercial property. Massive savings in not only energy but water and waste can be accomplished by focusing on the kitchen.
- Compost food waste (pre and post consumer)
- Check all gaskets and sealants around walk In refrigerators for leaks
- Ensure all refrigeration units close properly
- Consolidate refrigeration units which are minimally used
- Install humidity removal ____ in refrigeration units
- Install demand control kitchen hood ventilation units
- Use high efficiency fan jet sprays*
- Replace dishwashers with HE dishwashers that use water from the final rinse as the pre-rinse for the next cycle
- Ensure that all faucets have aerators (even if the gpm is high)
- Defrost food by leaving on counter or in refrigerator instead of using running water
